Decrease Malic Acid Using Extended Double Salt Method
Purpose
Use this method instructions and calculator if you are targetting Malic Acid removal and need to calculate the amount of CaCO3 and tartaric acid to add.
Background
Malic and tartaric can be removed to any extent desired.
INSTRUCTIONS
As with normal Double Salt procedures, the pH must stay above 4.5, so in an appropriately sized container, add the CaCO3 required, and then proceed to 'paste' it by slowly adding the wine/juice volume to treat.
Check under the microscope for double salt formation
When all of the volume to be treated has been added to the CaCO3 slurry, and the strong formation of CO2 has ceased, add the tartaric acid to the treated volume, with continued stirring.
When the tartaric is added, well mixed, and there is no more CO2 forming, the treated volume can be filtered off the chalk
with a lees filter, and added back to the rest of the untreated volume.
